Get yourself a pair of non-slip silicone gloves. You can grab the meat right off the rack instead of having to use utensils. Mine were a gift so not sure where they came from but I assume they are easily found at places that sell bbq accessories.

Invest in the AmazeN Smoker 5x8 pellet tray. It comes with 5 lbs of pellets.

It’s a must for the MES30. Place it in the lower left rack on the same level as the chip tray. Remove the chip tray and chip loader for max oxygen flow. Also make sure the top vent is wide open.

Get a good thermometer & meat probe with wireless transmitter, like the thermo pro.

That should be enough to get you going. Happy Smoking!

ETA: Ryno is right. Start with a Pork butt. It’s very forgiving

Why do you need a pellet tray/smoker tube when the electric smoker can generate its own smoke?

Got this as a gift. Has good reviews.

OP...if you don't already have a meat shredder you'll want one.

It’s almost all you really need

People will go on and on like smoking meat is Chinese arithmetic. Pages and pages, do this and that, about prime rib, brisket, butts etc

Rub the thing up w whatever, put water in your pan, run some wood chips through there, jam the thermometer in the meat and remove when it hits your desired mark

I agree that higher temps don't necessarily kill a smoke, but there's definitely techniques that help for different cuts.

The one tool that I bought after getting a smoker that has made all the difference is a remote thermometer. You need accurate feedback on the air temp inside the smoker and the meat temp. Once you know that it gets a lot easier and more consistent bbq.

Take a look at Thermopro, Thermoworks, and Maverick

Because the Amazen Pellet smoker tray/tube will give a much more even amount of smoke without having to refill the stock tray in a MES a gazillion times on a long smoke.

As others have said, accessory #1 needs to be a good wireless dual probe thermometer and an instant read probe to verify.
