A Declaration of BBQ War

Now I know Kreuz Market was #1 a few times on the Texas Monthly top 50 BBQ list. I went at the beginning of April and was pretty disappointed. Meat was good and not expensive, but it did not stand out as a cut above the rest. Employees seemed like they really didn't want to be there. The "no forks" thing is retarded.
A few days later we went to Joe Cooper's in Llano and I was much more satisfied with their offerings. Meat was sliced right off the pit, literally showed how much I wanted by measuring with my hands. Bacon and Jalapeno Mac and Cheese, delicious beans. Brisket was dunked into their thin sauce.
To the point, I've never had true KC BBQ or Carolina BBQ. But am interested in trying. I've been to Dreamland in Tuscaloosa (the original) and while it was enjoyable, I walked away feeling it was overrated as well. I've also had Memphis BBQ. That was also good, but nothing to write home about. I wish Louisiana devoted more to the craft.

I prefer Carolina Q.
Don't know about the state, but NOLA has really stepped up the Q game in the last few years.

My experience has been that Texas style BBQ does a few things very well, particularly beef and sausages. I've had some good and some awful BBQ in Texas, the bad are usually the result of using too much mesquite smoke.
For pork, nothing beats whole hog Carolina style BBQ IMHO as I like a vinegar/pepper based sauce. Tastes vary which is why some prefer KC or Carolina, others Memphis and some honestly prefer Texas...

Almost everything beats Jack Miller's, IMO. That shite is awful.

Texas does Beef better than anyone, I like my Chicken Memphis style and my Pork Carolina style.
Sausage is pretty good in Louisiana, not sure the style , but its local and good.

I believe that these places like Kreuz and now Franklins in Austin get so popular that they get overwhelmed. They have their Pit masters leave to start rival places. And if you are on the serving line, after a while, you'd rather work at a less "slammed" place for the same $10-12 hr rather than deal with the chaos every day. Or, if you stay, you're just trying to grind it out and keep your head above water.

Being from Texas, I've yet to eat anything close to the great BBQ that is here. There is definetly some bad here, but the good outweighs it.

i've been following the guide of franklin bbq since getting a smoker this year, and have been very pleased with my Q results.
Just ordered "The Prophets of BBQ" book and looking forward to increasing my knowledge of the craft,
also for those who do not already know, smokingmeatforums is an excellent source for all bbq and smoked meat related questions.
ETA to the original point of the OP's post I have had carolina, memphis and texas (have never been to KC) and think texas is the best by a mile.

oh really, thats disappointing, the description sounded like it had a lot of how to in it as well.
