For the record, I have lived in Memphis, Charlotte and Houston and I would rank as follows:
Memphis
Texas
Carolina
I have not been to KC. Texas has the best beef but in my opinion Memphis provides more variety primarily because they are better at pork and chicken. Beef is basically limited to brisket and ribs.
I've been to Lexington NC several times and eaten at three places and they were all disgusting. You might as well drink viniger and they don't really season the whole hog that much. Charlotte is almost entirely void of good BBQ.

Never been to Lexington, but the vinegar-based BBQ in Eastern Carolina is damn good...different, but good. If you're ever driving near a little shithole town called Wilson, NC, do yourself a favor and go to Bill's. Great Eastern Carolina BBQ and amazing fried chicken. frick "hush puppies" anywhere but Louisiana, though.

This is a sauce that was made for smoked chicken, I think a lot of people think it is for pulled pork . And the only kind that is good is Gibsons. The rest are mayo nastiness.

that's mainly in the Midlands (Maurice's). most BBQ places in SC favor vinegar based, though, but will have mustard based as well. I love mustard so I like the mustard based cue, but prefer vinegar based cause it's peppery. I always go for the spice.

I didn't mind the mustard bbq sauce at all. But I'll eat damn near anything. It just tripped me out when my pulled pork came out baby shite yeller.

I had Maurice's when I was in Cola last spring. Didn't care for the sauce, but the white pride pamphlets are top notch.

I got your back oldcharlie8. Every picture in that post is spot on and made me think back to when I was a kid and my grandfather would slaughter a lamb, and my grandmother would make sausage and get some pork steaks, and call the whole family because the barbecue is on.
Now I'm hungry.
That being said, Memphis is the best because I'm a rib freak. There had better be no sauce on my ribs, or I'll stick ya'.
