Cap towards the heat source to protect the meat, it’s gonna drip off even if you do cap up, it doesn’t sink into the meat like some seem to think, there’s more than enough fat in the meat to add flavor.

Here’s my secret. Throw them on the smoker for two hours. You get a nice smoke ring and flavor. Pull it, put it in a pan, cover it with foil and throw it in an oven at 225 until IT is about 200. Great smoke flavor and remains moist. Pull the foil off at an IT at 185 and it will crisp up the bark again.

I always trim the fat cap off to expose more meat to a rub. the pork is fatty enough on the inside and like you said it doesnt melt into the meat. Most people dont trim it off because it takes extra time.

Yeah, I've always trimmed as much fat as possible when I do mine. Seems like you and I are outliers here, though.

I even separate the two muscles within the shoulder somewhat. This allows me to trim off any silverskin hiding inside the pork and again expose more meat to rub. I am able to flatten the shoulder more which cooks it faster and give me more of that delicious bark.

Thanks! I appreciate that comment. Everyone who has had some has commented about how good this batch is "really good".

I failed to mention(not that it really matters I guess)that I got these butts for .79 @ lb a while back and had them in the freezer.

The other day when I was cooking these I told a friend of mine in Alabama that I had paid .99 a lb and he was shocked as he pays $2.50 from his "Pig Man". Lol..... Wait til I correct myself and tell him they were actually .79@ lb. Lol......

You just run with any old thoughts don't you.

Those butts look great, and fat down is preferable, and low is great. I go higher, but mainly because I always start too late.
