How should you prepare steak from the freezer?

According to this article, you should cook it frozen, and don't thaw it beforehand. It will taste better.

I don't see how you get a good sear on a frozen piece of meat.

I've read articles claiming you can get a great steak starting from frozen but I've never tried

They aren't suggesting you freeze a fresh steak to cook it. They are saying if you have to start with a frozen steak you shouldn't defrost it. In order to get the sear they use about a half inch of oil. They found the frozen steak retained more moisture than the thawed steaks, cooked more evenly, and cut out the defrosting time.

Not unheard of to intentially freeze steaks and cook them right out of the freezer

My dad used to season his deer steaks and individually freeze them. He'd randomly throw a couple on the grill straight out of the freezer. He seemed to like the results.

Slow cook, low heat frozen steak turns out pretty good. Somewhere on here I posted a link for slow cook, low heat method.

Yeah, the article leaves out a couple caveats that the video touches on. You need to freeze it in a way that minimizes moisture on the surface. It also takes more oil. They also mention they preferred the texture of the fresh, thawed steak.

To summarize, it's just another tool in the toolbox, not the end all be all.

Only do this if it has been dry aged for at least 30 days and must be prime quality.

Nathan Myhrvold, of “Modernist Cuisine,” did a video with Melissa Clark at the NY Times to demo his method for searing frozen steak in a cast iron pan with oil, followed by a super-low cook in the oven.

I've never tried it, but he made it work.

BTW, the correct answer is to put in Ziploc, put in sink under water (put something on top of the steak to hold it under the water). It will defrost in about 1-2 hours, depending on the size of the steak.
