Tri Tip steak

I kept hearing about tri-tip steak and wanted to see what the fuss was about. Not gonna lie, it was fantastic. Just seasoned it with some kosher salt, meath church holy cow, and meat church lemon pepper. Super tender and great flavor.

Unfortunately, I only let it rest for about 7 mins... probably needed another 5 mins of rest, but still tasted great.

Really hard to beat a good tri-tip. Love it for tacos!

I do these very regularly. Smoke to an internal of 110ish. Pull and let rest while I ramp the grill up. Sear briefly to color. Slice thin against the grain.

I season mine with a taco seasoning that my mom makes. I love it for tacos and fajitas. It's amazing. Occasionally, my butcher will have a waygu cut to step it up.

They have a pre-marinated Santa Maria style one they sell at Alexander’s, and it did not disappoint when I made it. Very good.

I buy the pre-seasoned ones from Sam's and Kroger. Best use of a sous vide machine ever.

I smoked one this weekend. Smoked it until internal temp of 110, about 45 minutes to an hour. Took it off, and tented it with foil and let rest another 40minutes. Got the pit up to about 550 and put the tri-tip back on and seared it on all sides. Came out great. Used a black pepper, kosher salt, oregano, rosemary, garlic powder rub and served with chimichurri sauce.

shhhhh! don't tell everyone. Really though, it's a fabulous cut of meat. harder to find here, mostly because the fellas in cattle country like to keep them local. I have many friends in Northern California and it would be very odd if you went to a getogether and there wasn't sliced tri tip with chimi churi.

I grew up in Tri-Tip country in California just 25 miles from Santa Maria.

This is how we had our tri-tip sandwiches only the meat was thinly sliced from Hitching Post. The roll was excellent holding that flavorful TT and you could get like the photo with House made BBQ sauce that had a nice spicy finish, or you can get the Santa Maria salsa (my favorite)




They were incredible.

Ever had the Tri-tip sandwich from Cold Spring Tavern? If you're headed to Los Olivos from Santa Barbara, its a short detour off of Hwy 154 on stagecoach rd. Its a pretty good sandwich. pretty cool watering hole also, with a tremendous view of the cold spring canyon bridge. Highly recommend.

I had a girlfriend in High School who lived in Los Olivos. Worked in Solvang one summer. German food restaurant. Learned to cook some there and made aebleskiver’s. You ever have any?

Loved that part of Cali.

First time I ever tried it was at a buddy’s place in San Luis Obispo. Been my second favorite cut ever since then. Cannot beat it for price to quality ratio. Surprised how easy it is to find in the Nola Metro area.
