I have no clue. It’s not any of the ones below, but they are some of my favorite and they are all pretty fantastic.

Muse gets crapped on for becoming pre medonnas (rightfully so), but they were a great band once. Knights is a phenomenal track.
My Morning Jacket's One Big Holiday has an amazing guitar solo to wrap up the song, especially live. Really they have quite a few on different songs. Great Band!

BTS is the first band I thought of, because Doug's solos are probably some of my favorite. But I can't say BTS is iconic.
One of my other favorites in guitar solos is Frusciante. The solo at the nd of "Scar Tissue" is pretty iconic but it was released in 1999. So maybe the beginning of "Can't Stop"?

To be honest, there hasn't been a ton of iconic guitar rock since 2000. There are great songs and bands, but rock isn't iconic these days.

True. Which is why I find it pretty difficult to think of an iconic solo since 2000.

Not a guitarist personally but something about Frusciante’s tone in the solo around midway through just floors me.
