Side note - traditional wings = Flats > Drums.
ETA- screw the wing industry. They've sold us that 1/2 of a chicken wing is a wing. Total crap.

I do a lot of "boneless wings" made with chicken thigh. Gets it much closer to the taste of real wings and with a captain Ahab beard right now they are much easier to eat.
