I prefer chunky potato salad rather than the smooth, creamy type.
6 russet potatoes-Boil until a fork can go through them with some resistance (this is subjective). Remove and chop into 1 to 1 1/2" chunks. As you mix in the mayo the chunks will break up and be smaller.
1 cup mayo (I don't use eggs)
1 cup diced onion
2/3 cup dill pickles (the pickles I use don't have near the vinegar sharpness as the big brand pickles)
1 tsp garlic salt
1 tsp celery salt
1/2 tsp black pepper
salt to taste

You take a little room temp potato salad on your spoon then go in for gumbo. Each bite has both.

Paul Prudhomme talks of putting potato salad in one of his gumbo recipes in a book from the 1980's. I've never done it, but I'm fairly certain if I said I put mayo and mustard in my gumbo along with pickles and potatoes, these same people would look at me like I'm crazy.

Thanks for the recommendations everyone. Took a little here and there and ended up making the potato salad (granted it looks more like mashed potatoes) tonight and will cook up the chicken and sausage gumbo tomorrow.
Ended up being:
- 1:1:3 ratio of mustard, dijon mustard, mayo
- 1:2:4 ratio jalepeno juice, pickle juice, white distilled vinegar
- 6 hard-boiled eggs diced up
- 3 lbs red potato (boiled in salted water)
- healthy portion of Tonys and pepper, also some salt, garlic salt, onion powder and dried parsley
- chopped green onion
Ended up being:
- 1:1:3 ratio of mustard, dijon mustard, mayo

- 3 lbs red potato (boiled in salted water)

Mayo, Creole mustard, salt, and pepper all to taste
That store bought is way too wet. I dip my potato salad in the gumbo, and I don't want anything to stay behind.

Very close to mine including the crab boil but I add finely minced purple onions (along with the celery) and eggs. I'm assuming you use eggs and just neglected to say so. I do one egg per potato.

Nothing wrong with baking a sweet potato and putting a whole sweet potato directly in the bowl of gumbo.
