Do yall realize the tater salad is not IN the gumbo? It's just in the bowl instead of (or in addition to) rice.

In the pot would be gross.

Everyone in here saying they don’t put the potato salad in their gumbo are probably from north of I 10. Does their opinion really matter on anything Louisiana.

grew up in St. James Parish... Potato Salad in gumbo was the only way to have gumbo. Shrimp and Okra preferred but mostly just Chicken and Sausage.

I was raised in Evangeline parish on chicken and sausage over plain white rice.

Always a lot of broth and thin.

I thought people were joking when I heard about potato salad but its damn good when done right.

The potato salad is not in the pot, it is a scoop of potato salad in the bowl of gumbo. First time I saw someone eat it that way, I was flabbergasted. Then I tried it. I am a convert now and it is my preferred way to eat gumbo now.

And for those who don't like okra in a chicken and sausage gumbo, my wife uses okra cooked down with

tomatoes

until it is just mush in hers. Can't really see either the tomatoes or okra in the final product. It is delicious.

Yes, it’s a thing, here.

Around these parts, the debate isn’t potato salad vs no potato salad. The debate is when do you add it to the gumbo.

Some people spoon it right into the bowl of gumbo. Right on top. Others like to but it on the side and dip each spoon into the gumbo as you eat.

Whatever you do, don’t mix it into the gumbo. The idea is to get the potato salad wet from the gumbo.

A lot of the people who don’t like okra in their gumbo is because they don’t like “slimy” okra. If smothered down properly, it shouldn’t be slimy. Also, keep in mind that gumbo literally means okra. Gumbo originally had okra in it.
