Had a Cajun friend from Lake Charles who wanted potato salad in his gumbo. I tried it and really liked it. Okra in the gumbo is great, too.

I call that “prairie” gumbo, not gumbo without rice. Delicious with potato salad and crackers.

Perhaps I’m biased as I find pretty much all types of potato salad deplorable. The idea of adding it to gumbo just sounds like sacrilege.
I’m right there with you. Never really liked potato salad and putting it in the gumbo sounds like something one of my Polynesian friends would do.

Chicken. Andouille. Rice.

Maybe a shrimp and crab gumbo on Good Friday.

Anything else should be outlawed.

Gumbo is better without okra than with. I can tolerate it and sometimes welcome a change of pace, but I never cook it with.

I never understood the fascination of potato salad with gumbo. In the gumbo sounds gross. I'd much Rather a loaf of French bread with my gumbo. Thats right frickers, a whole loaf.

tomatoes

We had sometimes put a few tomatoes cooked down in the gumbo and it was good. Never understood why some hated the tomato word associated with gumbo...

Then last week at Middendorfs Slidell, I asked for the gumbo and they warned me it was "tomato gumbo". I tried it and it was like a tomato soup with onions and seafood. No roux base, no okra; just awful. Like a mater/onion soup. So now I understand the objection to the tomatoes.

But still, a good dark roux, with the trinity; and almost anything taste good in there...

Technically, it can not be gumbo without okra! I like chicken and okra gumbo and love potato salad, on the side!

I tell ya. I didn’t try potato salad with gumbo until recently and I was pleasantly surprised. Really goes well with it.

For those of you saying you don’t like okra in gumbo, well, you’re not eating a gumbo at that point.

I love shrimp and okra in my gumbo, but potato salad on the side for me, not in the gumbo...
