Where are you guys going that you see hoards of 5k finishers in the teens and low 20’s?
What I’ve seen anybody sub-25 usually has plenty of room to run and the pack starts at about the 26,27 minute mark and continues to about minute 35 ( these people were trying a 10-minute pace and got exhausted 1/2 way through).

OK, OP. Here some real world numbers from the 45 yr old doing the couch to 5k week 3.
Interval Mile: 11:30. That’s 90 sec walk, 90 sec run, 3 min walk, 3 min run, and repeat.
Straight Mile: 9:16. That’s after my 30 min training session. Just curious what my time would be.
Liberty Park. 6PM full sun. Flat gravel track. Didn’t throw up or feel fatigued at all.

She isn't. She was minding her business and OP got in a conversation with her. She mentioned she is running a 5k on Saturday. Somehow, it came up that she runs a 5k in 31 minutes. OP, never having run a step in his life, and having no idea how far a 5k, 11k, 3k, or any other metric distance is blurted out that he runs 5k's in 29.
OP's goal is to run a batch of baby batter up in those guts and was struck momentarily insane. He did keep his eye on the prize though. We have all done something stupid when trying to win the draws of the fair maiden.

The La Marathon 5k in 20-8 had over 1300 participants. 29 flat woulda been number 273

Going to buy some gear tomorrow. Socks, stop watch, etc. I'll probably skip the running shorts after seeing how gay they all look.

That is really weak. Maybe you are a runner and don’t know it.
As comparison I am 6’2” and when I weighed 200 lbs I was benching 320 lbs and I considered myself average for the gym crew.

I’m pretty drunk right now and came up with a fool proof plan.
Either drink the night before, or lie again (since you already have) and tell her you were persuaded by friends, went out, and got drunk the night before and are really hungover. When you inevitably lose to her and/or throw up during the race, blame it on your hangover. Boom. Problem solved.
