I recently purchased Matty Matheson a cookbook and have really enjoyed it so far. I made my first recipe today and it was great.

I have many other cook books that I enjoy but this one made me think of the topic

The Louisiana Proud Collection of Home Cooking

LINK

One of my favorite cookbooks. It has favorite recipes listed by Parish around Louisiana. Most are fairly easy to make.

This is one of those questions like, What's your favorite band?"...it depends on the premise.

For a scientific approach, On Food and Cooking by Harold McGee.

Sous vide? Probably Under Pressure by Keller.

I get the most use out of John Folse's Cajun Encyclopedia. Beautiful coffee table book and every recipe I've tried has been fantastic and I've cooked dozens. Cajun Encyclopedia

I think Donald Links books. I recently bought a book by Leah Chase since she passed. Also - don’t sleep on the simplicity of Vernon Roger’s books. You have to buy most of them used on eBay or amazon. I like mine to be based on our cuisine in South Louisiana.

I don’t use them too often anymore but I do like to read them. Matt Mathewson has a bunch of YouTube’s.

Get Rick Bragg’s “The Best Cook In The World” on audio. It’s low Appalachian country cooking and a history lesson of how the recipes came into his family. Really nice to listen to.

Another old favorite to read is White Trash Cooking.

I still find myself using this one a few times a year along with my MIL old Times Picayune cookbooks.

I buy them sometimes, but I never end up using them. The only one I used a lot was Paul Prudhomme's Louisiana Kitchen.

Sure. But I didn't ask what your favorite cookbook was. I asked what some of your favorite cookbooks are.

The Louisiana Seafood Bible's are great.

The John Folse Encyclopedia is great.

And the America's Test Kitchen cookbooks are great as well.

I have a cookbook addiction.

Cuisine Rapide, Pierre Franey - Quick recipes that are delicious.
Evolution of Cajun & Creole Cuisine, Folse
Louisiana Kitchen, Prudhomme
Greene on Greens, Bert Greene
Victory Garden Cookbook, Marian Morash

Not a cookbook: On Food and Cooking (the science of cooking)

I need to get the Folse Encyclopedia. That's an obvious hole in my collection.

There is a place in New Orleans called the Kitchen Witch. Whole place has vintage cookbooks. Rent went way up and they are going out of business. Selling out to the walls now. 1452 Broad Street. Hurry.
