Going in July and was curious about what are some of the things to do out there besides the normal stuff. So far I got:

Eat all the fricking pancakes you can stand.
I would add hiking in the National Park. They have everything from easy to expert. It’s a really nice way to explore what’s around you.
If you have kids, hit any of the go-kart/arcades along the strip in Pigeon Forge. Easy way to kill a few hours. There are also some indoor water parks as well.
Dollywood is a great park for rides and entertainment. You can also stroll along the strip in Gburg hitting the shops as you go.

Take a day and drive to Asheville, NC and see Biltmore.

We did some horseback riding in Wears Valley which is close by. It was inexpensive and the guide was very friendly. There is also a cool roadside resturaunt on the way that's set in the mountains that you can't miss. I don't remember the name, but they have some cool tables outside right over a running stream and waterfall.

Not in or real close to Gatlinburg. Ocoee is best, Nantahala is more beginner and more fun to funyak.
Fly fishing the park is a blast. Trophy section in Cherokee if you prefer to catch big trout. Park trout are tiny for the most part.

A wine tasting at Smoky Mountain Winery is a must. The ladies there are very courteous and it isn’t as crowded as the other wineries on the strip. They have the best prices as well.
Hike the Cascades Trail. Starts off easy and then gets pretty tough the last half mile. Good chance to see black bears on this trail. We saw a young sow and her two cubs back in September.

A friend who lived in Germany for a long while recently recommended Poyner’s Pomme Frites, which has authentic, imported from Germany sausages. Nuremberger brats, etc. LINK

thanks for that laugh.
Have an aunt that works at one of the big Knife stores around there... not real sure why there are so many knife stores there however.

This. We went a couple times before we had kids and, for whatever reason, never made it into the National Park. Last time we were there we took our oldest with us into the park and did the short trip up to Clingman's Dome. After that, I wanted to go and do so much more in the park. Definitely don't miss out even if it's just taking a drive through and checking out some of the great vistas.
