This all makes complete sense, because you WANT him to live. I’m the same way, but if you look at it objectively it makes more sense that he’s killed. Right back to perpetuating the moral struggle of the audience.
Notice how every part of the scene makes you sad, except for one the thing. The song. The visuals of the scene are all there to bring you down, the song is your glimmer of hope for Tony. The audiences empathy for the sociopath. Everyone wants him to live. Meadow is important as well, meadow is the only person in his family that he never quit on. His little girl. shite he fricking hated AJ for a long time. Carm, he despised. But Meadow, Meadow was his hope. She represents the audiences hope for Tony’s survival, that’s why she’s last, that’s why it takes her so long to park.

I dig this and I think you could be correct. I wonder what someone who has never seen it would take away from the diner scene. My wife has never watched it, I almost want to do this experiment on her but would hate ruining the experience of watching the show.

Well he did make Tony somewhat sympathetic compared to the Richie Apriles and Ralph Cifarettos, but I thought that by the end (if not throughout the entire series) it was quite obvious that Tony, as well as generally every other male character, was a bad guy who deserved his fate.
It was no coincidence that in one of his last moments, Phil Leotardo was playing around with his grandkids right before he got popped. This was on the heels of Dr. Melfi's revelation about sociopaths having soft side with kids and animals. It just reinforced that someone like Leotardo, a thoroughly despicable person, can put on a facade of geniality. So could Tony, that didn't mean he wasn't a repeat murderer and immoral hypocrite.
I kind of view Melfi as an impartial jury who weighs Tony throughout the series before ultimately indicting him as irredeemable. We see signs of a working conscience (again, as opposed to the Cifarettos), but by the end of the day it's clear he's made his own bed and he'll eventually get whacked because of the life he chose, whether in that last scene or another time. I also think that Chase incriminates his family too. They had chances to rise above the immoral cesspool that is the mob life but chose to stay with it. Hence Meadow ending up at the end with some goon when it was clear she could have done much better, Carmela coming back to him, and Aj... well he was always fricked.

You could interpret it that no matter how good life may seem for Tony, he will always be looking over his back

I never watched the Sopranos but my dad was an avid fan of it and I will never forget the loud and very angry, "WHAT THE frick KIND OF ENDING IS THAT?!" that erupted when that show ended.

But I’m not sold on the ambiguously unambiguous ending. Weiner learned well from Chase on doing basically the same thing with Mad Men. It wasn’t that it was a bad ending. It’s just that it was just ambiguous enough to give people reason to debate.
