Church group in our Parish out here in Atlanta that meets twice a month always does a pot luck each meeting. There's always a "theme" for each pot luck ... whether it be the cuisine, the occasion, the type of dish ... whatever. The theme is chosen by whoever is hosting the meeting that week.

The couple hosting this week has chosen the theme to be "Iron Chef ... secret ingredient - LEMONS!"

Every other meeting the Wife and I have showed up with a dish that just blew their minds (even though it was some every day Louisiana grub and it wasn't a competition)... with a theme actually promoting a competitive vibe, we can't come in there half stepping.

But we got nuthin. Lemons, dude? WTF? It's obvious there's gonna be a sh!t ton of desserts, and somebody will try some lemon chicken ... and i'm sure someone will bake some fish with some lemon slices on it.

I need a savory entree that uses lemons as an ingredient, not just a garnish. What ya'll got?

Been cooking this recipe from Giada for several years. Always a hit.

Also, you can grill halved lemons. Not sure what protein you could use them with aside from chicken or fish.

Veal piccata never disappoints or
Chicken Piccata if crowd is too PC for veal.

Shrimp Scampi also leans heavily on lemons.

Veal Picata - but it might not work too well as a potluck type dish.

Don't have a suggestion right now, but using lemon zest in many dishes is a winner.

ETA: chicken, veal, pork or shrimp piccata. I don't know if this needs to be make ahead or if you have financial constraints.
