I buy Palmetto with jalapenos all the time, though. It's very good for a commercial brand.

This is good stuff. I like the smoked Gouda at Whole Foods. But my wife makes it at home so I'm good with hers.

Sharp Cheddar Cheese
Mayonnaise
Tabasco
Cayenne
Roasted red peppers (I use pequillo)
You can even cheat and buy shredded cheese and a jar of roasted peppers to save time.

This. Palmetto w jalapeños is crack for me. Put it on a Costco organic tortilla chip. Wow.

I knew it couldn't be that hard, but had never taken the time to find a recipe. I'm definitely making this soon

Agreed-shred your own cheese. Makes a big difference. Bags of shredded cheese have that powder ingredient to prevent caking. Shredding takes no time.

Was in Calvin's Bocage Mkt. last week before heading to the beach to pick up chicken salad. They had a special pimento cheese - I think it said "Lauren's special pimento" - I got some and it was delish. They also had their regular store-made too. The "Lauren's" was also store-made.
