I think gar pretty much sucks. I can eat it, but would never do it if there were other options

Used to catch alot of choupique in sweetlake on spinner baits bass fishing. Would whack em on the head wt a seat pedestal and put em in a crab trap. They were excellent for that.

Yes, can be good if caught in the right place.
Yes, gar balls and they were excellent.
Yes, but honestly don't remember I was so young.

And for the bonus,

Armadillo. And it was pretty good.

Being from Avoyelles Parish, we ate gar, choupique And Gou.
We didn't eat no damn possum though; too nasty. My mom used to make gar balls in gravy. Gou is also great in a white gravy over rice or fried. Choupique only remember fried. Kinda mushy. Not a favorite.

caught a big gar in the trawl once. Dad filleted it and told my mom it was Lemonfish. Tasted like sheet and tough as your belt.

Yes.

I've had worse catfish and and rabbit than all 3 but not something I crave.

Yes to all. Choupique patties and gar balls as others have said. Had and ol boy at work make opposum jerky one time. Not as bad as you think.

Tip on the choupique...keep it in the live well or ice chest with water ALIVE. Go home and get everything to fry ready. Take choupique out, hit it in the head and filet and fry immediately. You'll wonder why you never knew this before....and will actually be happy when one of those bastards hits your spinnerbait.

I heard choupique is good is you bread and fry fresh. Always heard never freeze. I wouldn't mind trying it or gar. Hell I'll keep a croaker if it's big so I can't judge. Never in any way would I eat a possum

Not yet. But one of the guys on a bowfishing trip last week is a chef. He said he basically pan fries the far and then pickles it somehow.
He claims its unbelievable good.
