as I child, I couldn't eat tomatoes. now...I can't get enough

same goes for:

sweet peas
broccoli
egg plant

but.......I never could (and still can't) eat okra.

all because my parents always just steamed them to a mush

I roast all of my veggies now and I can't get enough of them

just say NO to mushy veggies!

I think this will be a common affliction. Plus my mother used to use canned asparagus which should only be used as a punishment.

There are a lot of vegetables I thought I didn't like because of this. I only roast (or grill) vegetables. No saute, no steam, no boil.

Also steak. Growing up, I used to cry because my jaw would hurt trying to chew up steak. Had a good and perfectly cooked steak in adulthood and realized steak is great.

Macaroni and cheese

Pretty much anything that had cheese was not desirable to me

I'm still not a huge cheese fan but I love some old style macaroni and cheese

Maybe I need to try this....throw some on the grill. I can't really find veggies that I like outside of corn, green beans and carrots.

Roasting vegetables brings out the natural sweetness, so they're a lot tastier. I usually make the Asian Brussels Sprouts recipe that has been posted here, but even just roasting them with EVOO and salt/pepper brings out a really good flavor.

Agreed. My parents are more with the times now and do better on this, but as a kid all that crap was so overcooked and gross.

It would be easier to name what I liked as a child than what I didn't like.

Initially, the only vegetables I ate were green beans and LeSeur peas, which was quite an accomplishment since they aren't the most popular. Well, I ate onions, bell pepper and those sorts of veggies cooked in dishes when not too prominent in sight or texture. Also ate corn and potatoes in the starch category.

I ate ham, bacon roast beef, steak, ground meat, chicken reluctantly if not fried, pork and fried fish. Graduated to shrimp and crabmeat, with crawfish coming later. Fried oysters only.

Ate bread and butter, eggs and most sweets. No coconut which I now love. It caused a gag reflex early on, though.

Cheese pizza, of course.

That's about it.
