Looking at Mexico. Not sure about sandals because they're pretty expensive. Any suggestions for Mexico?

I would recommend Dominican Republic all-inclusives as opposed to Mexico. That's just me.

some nice places south of Cancun that aren't the typical touristy spring break type of places, some neat things to do around there too

You will get quite a bit of all-inclusives are a waste but I had a wonderful time at the one we stayed at on my honeymoon.
I only know about Cozumel and Playa but for my honeymoon, I stayed in the Bahamas.
I think its a great idea.
Really awesome all-inclusives and plane flights are gonna be somewhere between $5000-$7000.
You get past that and the place is gonna be out of control BA legit.

We went to Palm Island Resort in St. Vincent and the Grenadines and loved it.

Did Live Aqua in Cancun for mine, strongly recommend it, had a great time, several nice restaurants and bars on site. Never have to leave unless you want to go fishing or something like we did.

If someone put a gun to my head and said I HAD to go to Mexico (pun intended), I'd opt for Cozumel and never leave the island.
Presidente Intercontinental
But not Mexico, not now.
Bad things have, can and will happen there and a single Gringo (with a Gringette) has no help there.

Playa del Carmen
Not as "Americanized" as Cancun but not so isolated. Some of the all inclusives outside of Cancun are really nice...but really isolated. You couldn't just walk out of resort and explore the area. You would have to rent a car or hire a car to leave resort. Stay near 5th Avenue so you can walk and explore all the shops/bars/restaurants there. Also...the ferry to Cozumel is right by there. You can take the ferry to Cozumel and spend the day there(if you are a diver...you want to dive in Cozumel from what I hear...very good diving there).
