That's not how they do it. It's called subjective grading of term papers, not 'quizzes.' Hell, in 'communications' it can be even more subjective.
In college I took a course in communications entitled 'interpretation of literature.' Our final exam was to memorize a piece of literature... 10 minutes long and present it in characterization.
I chose "America Hurrah" by Jean Claude Van Itallie. LINK
I understand now that the current show Mad Men was inspired by it, although I've never seen Mad Men.
My professor was a young female leftist. She gave me a 'C'. It lowered my grade for the semester to a 'B.' I confronted her with this:
"Ma'am, you may have read in this week's Conglomerate (Centenary paper) that I won the Collegiate State Championship in Dramatic Interpretation at USL last week. I used the same piece and performed the same as on your final. I've been invited to the National Collegiate Championships at Loyola U in Chicago next month. But you deem it a 'C'. How so?"
Her: "I don't want to discuss it."

So if a professor wrote an article about she "hates black people" there is no cause for concern. After all, the burden should be on the minorities in her class to show that she unfairly evaluates and grades them?
For what it's worth, I doubt this professor purposely grades republicans more harshly. But her position is incredibly ignorant and I would hope that university leadership would condemn it.

I don't buy it either, but this is why you stay away from this type of general stereotyping of a certain group. Even if there is some validity it's overshadowed by the forum in which this professor uses her public position to push a political agenda. The University should release her ASAP to stop this public relations nightmare.
