Jackson might be a good one, but more or less his turn to islam in his pro career would be the only interesting thing.
Maravich has been done in many other facets
Cannon might be a great one as most don't know a lot about him I don't think.

Maravich or cannon. Both would prolly be really interesting even to non-LSU people. Especially if the cannon one included a side piece about Alvin Roy. Hell, I'd watch one on just Alvin Roy

Honestly, there is nothing interesting enough for anyone outside of Louisiana to make a LSU centered 30-30 about. Shaq is the biggest pro star to play his college ball here but even a 30-30 on him would only yield 15 minutes worth of LSU talk.
