Veal Parmesan (Photos)

Here is the way we make veal parmesan at our house.
You will need:
Marinara Sauce
Veal (I used veal cutlets), bread crumbs for breading the veal, milk and an egg for egg wash, mozzarella cheese, parmesan cheese, salt and pepper, Angel Hair pasta, butter. I show Romano cheese in the photo but did not use any in the dish. Also did not use any of the Progresso Italian Bread Crumbs.
To make the dish, I flattened the veal cutlets with a mallet between two pieces of plastic wrap. This assures the veal is thin enough to cook quickly and helps tenderize them.
and seasoned them with salt and black pepper.
I shaved about three Tablespoons of parmesan cheese.
Set up my egg wash with an egg whipped into a half cup of milk.
and set up my breading with a cup of plain bread crumbs, a couple of Tablespoons of Panko bread crumbs, salt and black pepper. I did not use any of those Progresso Italian bread crumbs.
Then I dredged the cutlets in the bread crumbs and set them aside for a few minutes.
and then coated them with egg wash, dredged a second time in bread crumbs and fried them in olive oil.
for about three minutes on each side
To finish the dish, I added a few Tablespoons of Marinara sauce to an oven proof dish.
Placed the veal on the sauce base,
and placed a slice of mozzarella cheese on the cutlet and then the rest of the sauce on the mozzarella.
And then topped the dish with the shaved parmesan cheese.
the dish goes into a preheated 350 degree oven for about 20 minutes to set the sauce and melt the cheeses
While the dish is in the oven, the Angel Hair Pasta is cooked in salted water. Angel Hair takes about three minutes to cook.
And is plated with a little melted butter. I like parsley on mine and the wife doesn't

This dish can also be made with chicken or Eggplant. All three versions are excellent.
Nice evening meal.

looks good, for my breading I dip the meat in dry flour then eggwash which makes like a glue and the breed crumbs stick real thick on it

Would not eat. Winn Dixie mozzarella wouldn't make it through the door at my house much less get in the fridge. And the "Restaurant Quality" veal is suspect. Is it even gluten free bro ? Should have bought the ingredients at Sam's. That way you could have had one decent meal that day. A hot dog.
