That's going to depend on where I am that I can only watch 1 channel.

Examples:
Deserted island in the ocean = Weather Channel (so I know when a storm is coming)
Bunker because a war is going on = some news channel
In the middle of the wilderness = some channel with an assload of survivalist shows (NetGeo, most likely)

etc.

Before it became the All Pawnstars All the Time channel, I would have said History. I guess ESPN now.

CBS (masters, super bowl, college games, NFL, march madness) or ESPN (all sports).

Gotta go with ESPN. That, plus Netflix and Hulu are basically all I watch already unless a game I care about is on another channel.

Cartoon Network.

Looney Tunes and Tom & Jerry in the mornings. Adventure Time and Regular show in the afternoons/evenings, and Adult Swim to wrap up the night.

ESPN has become so unwatchable now I've learned to live without.

I would choose to not watch TV anymore. Could you imagine how fricking boring that would be to be confined to just one channel?
