I have read the first three and am half-way thru the fourth.
My ranking so far would be:

Book 4 has been a huge disappointment. It's like the author just threw some useless crap together.

Should I go back and read the books after watching the episodes or does the show cover all the stories well?

I saw the first season without reading the book. The book goes into so much detail. I understand the connection between the children and the wolves much better since reading the book. So, yes. You have to read the books.

Feast is tough, but it's not useless. You just have to struggle through it.

I liked Dance the most cause I'm most interested about what happens at the Wall and what Bran's role could potentially be.

What you need to understand about Feast for Crows is that it wasn't supposed to be a standalone book. It was supposed to be combined with book 5 (I think), but it was too long.
It may be the worst of the books, but it does pick up in pace near the end. Also, you gain insight into a whole other area of the world. It may be slow, but it is integral.

I liked the stuff in Dorne in Book 4 and I was okay with the Sam plot. The stuff in King's landing and Sansa was just monotonous.

Part of the reason 4 was the worst was the split of the books as referenced above. But mainly it was because there was a bit of a reset in the story following all that went down in book 3. There was a lot of building that needed to be done.
I still enjoyed 4 but it required some effort to get through. There was probably a bit of fatigue from the 4000 pages by that point as well.

I'm actually a huge clash of kings fan; thought the stuff with Tyrion was the best part of the entire series yet

3 - Favorite book of all time
2&1 were neck and neck for me and not that far off of Storm
5 - Really enjoyed it. But didn't advance many of the character enough.
4 - I still recognize it as a good book. Just not nearly on par with the first 3.
