Different things to do with deer meat

My brother in law gave me a shoulder from a buck he killed late in the season. I got about 6.5 pounds of meat off it.

I’ve already processed 3 deer of my own for sausage and ground meat. I could obviously just do more ground meat, but thinking of other things to do with it. This is my first year doing my processing at my house.

Snack sticks? Breakfast sausage? Give me some ideas to try, I’m open to most things as long as it can be done with a grinder and stuffer.

Roast, stew, tacos. I also always save some cubed meat for deer and vegetable soup.

I made jerky for the first time the other day, but I used my already ground up meat in a jerky gun.

If you need ideas, check out the Meateater’s recipes and videos if you don’t have a good cookbook at home.

Didn’t think about the tacos but I’ve wanted to try some. Might do that

Have some round roasts saved up from my deer. Outside of backstrap/tenderloins, roast is my favorite to do.

Your ideas are good, breakfast sausage with a deer/pork mix.

I've never done snack sticks but I've done jerky. Air dryers are pretty inexpensive. I would think for snack sticks you wouldn't need a casing you could rust roll it into that form and dry them.

I take every neck roast from every deer killed at my camp. Other guys don’t want to deal with it. But after I clean it up and debone, I’m typically left with about 5lbs of meat that I put in the crockpot and use the MS pot roast recipe and serve it on some pistolettes with shredded lettuce and tomatoes. Can’t even tell it’s actually deer meat and usually get 2-3 meals out of it. You could always add potatoes and carrots for more of a stew but either way it’s a good meal.

Season with Tony’s and put in crock pot. Dump a bottle of worstershire sauce, a bottle of turbo dog, diced onions and jalapeños and turn it on high for 8 hours. Awesomeness awaits!

Ground jersey is a great way to burn through it and just do like teryiaki and almost anyone will take it and eat it.

I like doing some summer sausage next, no reason to put cheese in it imo it’s expensive and just have a slice with a slice of cheese and a cracker. It’s also fairly easy to give away.

Summer sausage is very easy to make with a pellet grill or smoker. Way less work involved than jerky or burritos or snack sticks.

I pulled out 2 packs of ground meat, seasoned and loaded it onto racks using the jerky gun. Stuck it in the pellet grill for 3.5 hrs. Pretty easy for jerky/snack sticks.

Yeah I guess a jerky gun would be about the same, I was just talking about stuffing and twisting all the snack stick casings or running 6 pounds of meat through a jerky cutter then marinating and all that.
Summer sausage can be mixed with seasoning ground and straight to a couple tubes.

A deer shoulder? W three in the freezer? Does he hate you? I’d just brown the meat and stew down. Can add barbque sauce and make sandwiches, Or just go grab a brisket and grind up some meat for freezer.

It wasn’t meant for me in the first place. It was for his dad, my FIL. then my FIL just let it sit in the ice chest (still with ice) and told me he didn’t want to deal with it and take it before it went bad. So I just deboned it and kept it

Do this, then freeze as meatballs, premade hamburger patties, deer tacos, breakfast sausage patties, etc.

I've used a whole front shoulder and shanks to do birria tacos. My daughter loves it. Smoked with dry seasonings for 2 hours. Then added the birria mixture and braised for a few hours.
