My Itch in Fixed Blade Knives Is Satisfied

I currently have a good bit. too much even. My recent addition is an OD green Montana Knives Company Wargoat with a black ring and magnacut blade.. The following is a mixture of absolute tanks and sub 3 inch blades that I also own.

I am looking into fixed blade culinary knives now, and then into EDC, less bulky knives to carry.
Secondly, I am noticing there is not much of a market for after market sheaths that fit compatibly to much of the knives that I listed. I would rather keep my knife on my person attatched to my belt horizontal carry that lies flat and tight to the belt. I have yet to find a suitable accomodation. If yall know of a company that offers great sheaths then I will look into carrying a fixed blade as long as they fit comfortably.
Next shoot me some suggestions on Culinary knives. I am leaning towards a set of MKC knives for about 1400 bucks, but they are sold out now and I am open for new alternatives.
Note:
Most of the popular blades are always sold out. With brands like Dawson Knives and MKC- there is a real adrenaline rush when you get a pushed notification that a knife you want is back into stock and that pushes me into spending too much money.
Also, what do yall have and what is your favorite fixed blade or folding knife. Fwiw, I dont care about spyderco.

I’ve got the MKC culinary set plus the paring knife, breaking/boning butchers, cleaver and steak knives. Great product and company. Good story and made in the USA. Happy to support them.

Try Armatus Carry Solutions for sheaths, I have them for ESEE Candirus and Izulas. They make them for a bunch of brands, and will make custom as well.

I like the MKC’s I have, but their branding, marketing, and overall corporate vibes are too polished too make me a flag waving fan. They’re alright but they aren’t small mom & pop company - they either have some PE injection or looking for it.

Hunting:
Benchmade Steep Country Hunter fixed blade. I like that the handle is rubber that grips despite blood on my hands. Holds and edge very well. It is my only Benchmade though, I’m sure most their knives are excellent.

I’m curious out of the 7 or so knives you listed plus the MKC you just got where does it rank. And is there a clear winner of the bunch? Thinking about getting a good knife and trying to figure out which direction to go bc I don’t plan to buy a bunch.

This gets you directly in touch with the knife maker in Japan. He makes all kinds of styles. I have his Nakiri in carbon steel. Amazing knife for veggies.

We have several Shun knives as well and they are very good. Got some for my MIL last year as well.
The company that sells them in the US also sells Kershaw and Zero Tolerance. I don’t know that the same company makes them or is just a distributor.
Have a few Dexter Russell knives and they’re great for what they do and especially for the price.

Many are purposely bought for hiking/ hunting/ camping. The absolute tanks of knifes are not easy to EDC. I pick up the Emmet Sheepsfoot most often because it's a smaller blade.
My suggestion is find a great company like Dawson, TOOR and MKC, review all their youtube review videos on EDC carry blades like the Harvester or the White River Emmet since you only want one or two. These companies offer free resharpening for life as long as you pay for shipping.
And most importantly get comfortable carrying in public, drawing out the knife and resheathing. The sheath should be locked into your belt or pocket when you resheath. Your pants should not rise when you draw the dagger out. Lastly hearing a mechanical click when the knife is locked in its sheath is music to the ears. Most kydex dont offer this. I am mostly pissed at the sheaths because I am paying a premium for the knives.

I will sometimes work in my FIL grocery store on holiday weekends cut steaks and grind hamburger from a chuck eye roll. Have to cut it up into chunks to fit into the grinder. I use Dexter Russell when doing that.
Also have a butcher style knife at my house. I use it to cut beef fat when I’m making tallow. They’re great for that.
