Need a good praline recipe and I trust this board more than google.

Last year I took a shot at pralines and the shite never set. I love em. Just can’t make em. Please help.

The key is 3 cups of sugar and 1 cup of butter milk.

My sister, who can make some excellent pralines, is adamant that you need cool/cold dry weather to make good pralines.
However, this past September I went to a BBQ joint and they had pralines for sale. I bought one. I was surprised at how good it was. The weather was hot and humid.
So, I'll be telling my sister she is full of shite. lol

1 cup white sugar
1 cup light brown sugar
1 1/2 cups pecans cut like you want. I chop a half cup and 1 cup whole
1/2 stick of butter cut in 4 pieces
1/2 cup of pet milk
1 teaspoon vanilla
pinch of salt
put sugar and pet milk and salt in pot with thick bottom. medium heat stir and bring to a bubbly boil. Time for 4 minutes stirring to keep it from scorching in one spot.
after 4 minutes remove from heat, add butter, vanilla, and pecans and mix.
should start setting quickly. if too thick you can add a dash of pet milk so they drop like you want.
Also, salt is optional, sometimes i use it sometimes not.

1 can Pet evaporated milk
1 cup sugar
1 stick butter
1 cup rough chopped pecans
1 tbsp vanilla
Combine milk, butter and sugar in saucepan. Cook over medium heat, stirring constantly and scrapping the bottom like you are making a roux.
Cook until the mix hits 235-240 degrees or soft ball temp. Google soft ball candy temp if you aren't familiar with that.
Turn off heat, mix in pecans and vanilla.
Spoon onto baking sheet or parchment paper and let cool.
Stirring constantly and hitting the right final temp is the most important thing.

These are the easiest and best tasting pralines I’ve ever made and no candy thermometer.
2/3 C heavy whipping cream
Pinch of salt
1 ½ C roasted pecans
1 C white sugar
1 C light brown sugar
½ C butter
2 Tsp vanilla extract
2 C powdered sugar
1. Start by placing wax paper down where the pralines will be cooling.
2. In a large sauce pan add in cream, white and brown sugar, and a pinch of salt and melt on medium heat. Stir constantly.
3. Let it comes to a boil and then boil for 1 minute stirring continuously
4. Remove sauce pan from heat and add in vanilla and powdered sugar. Sift powdered sugar into mixture to avoid clumping. .
5. Add in roasted pecans and stir until the mixture thickens..
6. Drop spoonfuls of praline mixture onto wax paper and let cool. Then enjoy your delicious homemade pralines!

I think it's an old one. My MIL got it from an older lady who worked in the pre-school kitchen at LSU.

It’s always 72 deg and low humidity in the kitchen unless she’s cooking in an outdoor kitchen
