Went there today. Prime tenderloin was $29.99. Prime ribeyes were 25.99

It may just be my location, but I have always been underwhelmed by Costco’s steaks. Their ribeyes have little to no marbling, and usually a giant blob of fat right in the middle. Their filets were tougher than you’d want for the price point.

Criminal. When I started shopping there around 2018, they sold prime thomahawks for $11-12/lb and you could buy 1. The whole side of ribeyes uncut was $8-9/lb. Prime.

That makes zero sense. Grading is done electronically by viewing marbling. Costco is grading. The USDA is. It’s probably upper 2/3 choice, which may be better than choice you’d see in most grocery stores

Costco has the lowest marks up around, just the cost of qualify beef these days.
Prime has been 25-27/lb at Costco lately. Choice not on sale at local places like Publix are all around 20+ now

I checked the Zuppardo's store ad and they are selling half slab choice N.Y. Strips for $10.99 a lb.

There are less cows and less processors thus the price. The irony though is that the cows we do have are fatter than ever so the overall tonnage produced is about the same. Feed costs are astronomical though. That’s not helping. Basically, instead of an 1100 pound cattle it’s more like 1600 these days. They are getting top dollar and having to do less work so there is no incentive to buck the system at the moment. Trust me, they “get it” but wtf is one to do in this situation? I try to be at Sam's Club (no Costco here) when they open to get their marked down meats.

Rouses has an entire Boneless Chuck Roll for 5.19 a pound. Today is the last day though.
They can slice it for you too in to steaks, stew meat and roasts. I went to a store and they were running about 130-150 dollars depending on weight. The grading is Chairman’s Reserve.
