Willie's on Coursey has two - the Saintsation and the solid grilled shrimp poboy.
SAINTSATION
Sautéed shrimp with onions and bell peppers melted under pepper jack cheese; topped with fried crawfish tails, lettuce, tomato, and jalapeño mayo.
Poboy Express on Siegen has a good classic fried shrimp poboy

Willies on Coursey has a foot long fried shrimp poboy special. I believe they offer it every day currently. Tons of shrimp for $12.

i can tell you where NOT to go. Downtown Seafood on 3rd street. the old foreign dude that runs the place is a complete arse. always yelling at his employees.
