Break up the stranglehold the Big 4 beef packing houses have on the beef industry.

maybe. But if you go local farmer to butcher route, you will pay more for the same pounds. Quite a bit more and it may not have gone to a feedlot to sweeten up the meat.

Got cow locally a week ago. $5 lb.
Few slaughter houses around me. Deer season so about to be shut down for a couple months.
Think wait time is around 6 months last I checked. Or 8 with deer season now.

I used to eat steak 2-3 times a week. Thick NY strips were $6.98/lb at Costco just a few years ago. I just refuse to pay 2X+ that for them now. I will stock up when things go on sale and also cut my own.

This is so wrong if you live in the Midwest like me. We get a quarter of beef every year from the meat locker and have a local source.
Invest in a deep freeze and buy from the local meat locker and it's about $5/lb overall for ground beef, roasts, sirloins, T-bones, ribeyes, stew meat, and brisket.

not around here. Maybe due to lack of small butchers. If you get a cow butchered here its because you are willing to pay more for a local grass fed animal.
Not sure how breaking up the big 4 can drop prices much though. Would be better for our food security though for sure.

The Big 4 Packers are the middle men controlling the entire market. Need to go back to the days where there were many meat packing companies.
It's not a monopoly because there are 4, but it is a meat cartel. Tyson definitely needs broken up. As does JBS, Cargill, and National

It wouldn’t. that other posters statement is based on the fantasy that there is some surplus of suppliers with cows just ready to sell locally. Which there isn’t for the overwhelming majority of people in the United States.

I wonder how much is the cost of beef downstream of the rancher. The cost once the cow enters the slaughter house holding pen vs the cost at the grocery store register.
I've read that the cost of a head of lettuce is minimal for growing and picking. The cost is once loaded on trucks and leaving the farm. Certainly understandable once energy, transportation, and handling get involved.

Purchased 40lbs ground beef for $5.50lb from Kirk Martin Slaughterhouse yesterday. Cheaper than any major grocery store locally and a whole lot fresher.

I buy pork butt/shoulder and grind it. I substitute it for ground beef in all recipes. I don’t even miss beef anymore, except for grilled burgers. I have a high red blood cell count, so it’s a win/win for me.
