How much should I be looking to spend for an engagement ring?

Buy online. You can build exactly what you are looking for and it will be Cheaper than local shops

How much can you reasonably afford? I was lucky and got an old cut family diamond that I was able to repurpose, but my now wife laughed when I asked if she cared about lab vs actual diamonds for the rest of it. She didn't care, as marriage isn't about that. All told, I was out about 3k for both rings combined and spent less than 3.5k for our wedding weekend.
I know there's a lot of cynicism out there about marriage, but I am happy I did it. I've been with my wife for close to 5 years now, and I can't imagine a life without her. We are a team, and she's my best friend. I've been struggling lately, and she has been there to keep shite together while I figure it out.
Big thing is marriage is a marathon, and the wedding is usually a mile in at best. Make sure to marry the right one.

I told my husband to get mine used. Paid like half what it would’ve cost new—it’s an antique platinum and diamond piece and I love it.

Its kind of like asking how much should you spend on a honeymoom or vehicle?
SO many individual factors should go into that decision.
My only advice is not not begin an engagement or marriage based off what works for others. Talk to your family. Talk to a financial advisor. Talk to her family. Think about what sets you and her up for happiness well beyond the engagement.
That being said, buying a ring you can add to over the years is always a good move when your budget starting out isn't what you plan on it being for years to come. You'll want to add a band (at least on one side) at some point. Then you can add a band on the other side. Possibly change the setting for a bigger center stone if you want, etc.
Do not overspend just to try and make her or other people you know happy.

The whole engagement ring thing is ridiculous. You can buy a 3 carat mossianite for a few hundred bucks. 99% of people can’t tell the difference.

I can afford $6K. Tough bullet, but they will let me pay $1K every 2 weeks.
Backstory:
She lost her debit card, while waiting for it, her Spotify lapsed. So she started listening to the radio. Radio has a contest and she decided on a whim to enter it. She won a 1.25 diamond ring. The jeweler said they’d work with me on an upgrade. So at the end of the day, I’ll spend $6K.
