Preference on size of shrimp for poboys?

We’ve been serving large ones (21-25) at our restaurant in Liverpool.
Biz partner wants to reduce size to 35-41 to make poboys look “better/fuller”, and make it easier to include in our mac n chz, as we offer to add blackened or fried.
What do you think is best?

I’ve always preferred shrimp on the smaller size for poboys. I want my bite to include them, instead of bite a few in half. If that makes sense? Plus I like eating the ones that fall out.

Wife and I were talking about frying shrimp this weekend. Might have to make a poboy now.

I think medium to small work better in a poboy. But any properly prepared shrimp poboy is awesome.

I seldom order a shrimp poboy anymore because of this. For me, the worse thing is one of those overstuffed poboys filled with those small frozen bag shrimp that taste nothing but batter/breading. Put large shrimp that taste like shrimp, clean them, devein them. Doesn't have to be overstuffed and it does not take a ton of shrimp. Is there anyone left that makes a real shrimp poboy??

41-50 is my preferred size for poboys. 21-25 is way too big IMO.

The smaller the better. Big ones tend to fall out.

Yes, definitely 41-50 area. Smaller shrimp equals more surface area, equals more batter and crunch.

Definitely Like silver dollar sized. Smaller is better than bigger IMO.

All the old timers used say the small to medium shrimp have the best flavor, as I’ve gotten older I tend to agree.

Yeah, the big shrimp deserve to be showcased on their own, not stuffed into a poboy. The poboy needs the crunch of smaller shrimp.

Another vote for smaller shrimp. For one, they just function better in a poboy in that you get shrimp in every bite where big ones seem to fall out and move around and just harder to eat in a poboy. From a buisness perspective, smaller shrimp are cheaper per pound so you can put more on a poboy (and be known for having loaded poboys vs giving 8 shrimp for an entire poboy like I’ve gotten before) for the same price as lesser large shrimp. This cost difference is minimal if you’re making them at home but I imagine it would make a difference in a restaurant setting over time. Nothing pisses me off more than ordering a poboy and it comes out open faced with 7-8 large shrimp on it. I’d much rather the same amount of shrimp in weight and have 40-50 stuffed between the bread.

That's looks perfect to me. I don't like a million little shrimp, but I don't like 6-7 big ones either. Uncle T's has a great shrimp poboy as well.

me too. Stuffed with enough to eat about 1/3 of rm before you start on on the poboy
