Was watching some videos a while back of how nice the 711 stores are in Japan. You can actually get decent and somewhat fresh food in those places. I think there could be a market for this in the U.S. and I'm sure they exist in some capacity and I just haven't seen them.
I think something like this would do really well in the U.S. but you might have to eliminate some items that are found in regular convenient stores to make it viable.

Yes, I was just thinking how I could go for a shopping experience with even higher prices.

On the high end, you of course have Buccees for usually-clean shithouses and serviceable food. Neither are great, but considering the number of he unwashed they welcome into their stores on a daily basis, they really are doing an incredible job. Big Tex is right there in experience but it's a smaller store. On the other end of the spectrum is every Valero I've ever been in. Love's are one step above Valero.

In LA I’d still wait in line 10 minutes behind people picking scratch tickets.

If you consider Buc-ees a convenient store then yes...

Royal Blue Grocery is higher end but mostly located in urban centers. Exorbitant prices as well...

Racetrac used to be like this

Anything easily accessible turns ghetto quickly in the modern world.

So like every gas station in the south?

a gas station without the gas station interior aesthetic could play in some upscale areas

I’m not a big shopper but because of how well it’s run and the open parking lots etc. I can spend time walking around a Bucceess.
It satisfies all my senses and I fill fulfilled for the day.
Coated cashews are addicting.

I like this idea a lot. I don't know much about the Japanese 711 scene, so not sure if what I'm picturing in my head is what you're picturing.
