I'm looking to smoke something that I don't typically do. I'm not looking for an all day smoke either. Maybe something that'll be done within 2-6 hours?

I've done duck before and liked it, so might do that. Not interested in Turkey.

Does anyone have something untypical that they've smoked that turned out great?

Pork Belly Burnt Ends. They also hold really well in a crock pot:

Leg of lamb smoked is a solid option if you can find it locally.

Whatever you do, boil some brats in beer and slip those in the smoker too.

How about a couple nice size joints and you'll get your head straight and put a brisket, pork butt, some ribs, etc. on the smoker.

I like to cover chicken and ribs in jerk sauce/seasoning and then smoke.

Spiral sliced ham is another option

Would be hard for me to not smoke ribs on July 4th. Maybe change up the seasoning/flavor profile?

This looks like the winner. I like the idea of doing sliders with them. I may not do the super sweet sauce like they did in the video, or only do that for some.

All very good suggestions. Thanks everyone!

I came here to post this.

Lightly season with SPG and smoke a tritip to medium rare then sear it off. Amazing flavor. Don't overcook it.
