The recipes in the Shadows on the Teche cookbook from New Iberia are 100% rock solid. It’s a community fundraiser cookbook but I’ve used it for 20 years as a source and everything in it is good to go.

for Louisiana cooking, Paul prudhommes Louisiana kitchen

Also, Tom Fitzmorris’ book is a classic

Paul Prudhomme's Louisiana Kitchen is the #1 classic.

The Tom Fitzmorris book referenced above is the one we use most.

Y'all will probably scoff at this, but this thin little book, which is more like a pamphlet, is good to have on hand. The ingredient lists and instructions are simple and short.

I usually reference it first when working on a dish and then dive deeper in other cookbooks or online.

I have tons of New Orleans/Louisiana/Cajun/Creole cookbooks. The one I use the most is this one, "The New Orleans Cookbook" by Richard Collin







The one I consult the most is this one, "The Encyclopedia of Cajun & Creole Cuisine" by John Folse

Absolutely. It was through his "Underground Gourmet" restaurant reviews back in the 70s that I learned about LeRuth's, Moscas, and so many other great New Orleans restaurants.
