Looking for a 330+ gallon wood smoker *Edit*

1. This will be to start a cook off team for a high school in Texas.
2. Prefer new.
3. On a trailer.
4. Willing to drive + or - 10 from the Houston area to pick up.
5. Budget is in the 10-15k range. (Funds are coming from a grant and not property taxes for the Texas folks reading who would object)
6. Will have to fill out vendor paperwork for tax purposes for the school.
Who do you recommend?
We picked Boathouse smokers from St Amant to build our smoker. They were great to work with.

This is like 280 gallon but in Houston if you want to buy from one of the best BBQ purveyors in the Houston area.

No input other than that this is an awesome thing. My small hometown in North Texas has a BBQ team that has been competing for the last 2 years. The kids have a blast and learn some great skills. I really wish we had it when I was in high school.

Same here. These high schools these days have fishing teams, bowling teams. Now BBQ teams? I would have been in hog heaven.

Yup, I am jealous. But we did have an unofficial drinking team at Benton back in the day. 3 time Parish champs in 4 years! Seems like today's kids are missing out on that club, but all the clubs now are cool as hell.

If it were me... I'd contact Aaron Franklin and get one made by them. He knows what you need to make quality BBQ>

Just because you know how to smoke quality meat does not mean that you understand the material science and aerodynamic properties of how a good pit operates.

AF made the pits they run at the restaurant, so he understands the dynamics.
If you’re needing it by next school year you’re options to get a pit from one of the big boys will be slim since most have at least a year+ waiting list. I run Big Phil’s Smokers out of Caddo Mills. His turn around time is a few months and his pits run flawlessly. With your budget you won’t have a problem getting a nice trailer mounted 500, I wouldn’t recommend anything smaller for what you’re doing.

True Bomb Smokers
Probably not practical because they’re from Brazil, but you might look into these smokers. A lot of high-profile Texas pitmasters say they’re the best made. I met the designer, Murilo Mello, at Goldee’s three years ago when he was interviewing pitmasters at Texas Monthly’s top spots. Looks like he learned from the best and came up with a great product.
