Billy’s Tasso was Dissapointing

Stopped by Billy’s in Krotz Springs and grabbed a pack of Tasso. It looks great, but… there’s zero flavor. It doesn’t have any smoked taste nor any seasoning taste. It’s very, very plain. I’m disappointed.




A piece that wasn’t cured all the way through.

Ronnie’s isnt any good either. It’s the only thing I’ve gotten there that wasn’t good eats

Try Kartchner's across the street. They have replaced Billy's as my go to stop travelling from home to NOLA

I've tried tasso form just about everywhere I've been and Kartchner's is good but I don't think there's any better than Bailey's in Laplace.

Billy’s does 1 thing extremely well, pepper-jack stuffed boudin balls. He originally started selling boudin and only recently got into the specialty meats such as Tasso, boneless stuffed chicken, fresh sausage, stuffed pork roast, dressing mix, seven steaks, etc… places like Dons, Best Stop, Poches, and Teets & T-Boys in Ville Platte have been selling specialty meats for awhile and IMO have much better Tasso and andouille.

Cajun Family Traditions (Richard family out of Church Point) has Tasso , sausages, andouille, and hogs head cheese that is sold at Rouses. Very good products

I use the Tasso from Bergerons in Port Allen.
I love everything at Poches in Breaux Bridge, I do not like their Smoked meats for Gumbo, Jambalaya, etc. They use Pecan wood to smoke, like many others in La.
I will say Poches plate lunches are some of the best.
Plate lunches at Bergerons are also some of the best.

My go to tasso is Rabideaux's - I-10 Exit 44, Iowa, LA.

Billy's cousin Bubba at the Mowata Store, between Eunice and Crowley makes the best tasso, imo.

I don't like Billy's boudin and the quality of the wraps and the balls aren't as good as when he was in the little blue gas station in Krotz Springs. In the blue store, he had a small hot box that held all the fried goods and kept everything hot and crisp. The large boxes he has now, allow the products to get soggy.

Billy's "salt only" cracklins are the best.

Iverstine's also has excellent tasso.

Only good store bought tasso I've had over the years came out of Ville Platte. It's really easy to make and store your own tasso. Homemade is much better than anything we can get up here (including Best Stop's tasso).

Bubba Frey and Billy Frey's grandfathers were brothers.

Donald Link's grandmother was a Zaunbrecher and Billy Frey's grandmother was also a Zaunbrecher.

I work with the daughter of the Lejeune’s bunch. Can confirm their tasso is nice and smoky. Got some not too long ago, 5LB bag for $33.

They have it for sale yes. They’re asking 1.5. The old man and his brother still run it and have made their lick, and could just shut things down if they wanted to. Their kids don’t want the hassle.

Someone could easily just start their own sausage company with 1.5, but the recipes and name would come with the deal, presumably. Not sure about the property, as it is where some of them still live. The right person could flip that 1.5 easily and then some. The current owners really are laid back and don’t do online and shipping as much as a young and hungry entrepreneur would.

They make, and always did make the best ponce.. and their store is always clean and spotless. Great operation.
