Any local places around Gonzales or BR area that sells their dough balls? Having some friends over this week and do not have time to make our own.

I've bought from Whole Foods. They used to have them frozen; not sure if they still do.
More recently I was in a jam for time and bought some (too) fresh from the WF deli area. It needed to sit out a few hours before it got to the stage where I could form a pizza crust without it springing right back.

Rocca sells them. I have gotten them a few times and they are really cheap and make great pizza

Years ago, I used to buy them from Sam's in their food court area.

they'll have them non-frozen in their kitchen. Just ask
best to give it a day or two in the fridge in my experience but fine to cook the day of

St. Bruno's sells their dough around town. Rotolos will also sell just their dough.
Making the dough takes all of like 10 minutes and the rest of the time is just proofing

Is there a Reginelli's in BR since the one on Chimes closed?
If so, that is the answer.
I go to a holiday party every year where they bake pizzas on the Big Green Egg.
We have had them fron Whole Foods and Trader Joe's. The consensus is that Reginelli's is the best.

Stop the fricking presses. Seriously? How much? Do I just walk in or do I have to call ahead?

It's the planning ahead part. When I want to make pizza, I want to make pizza. I don't want to make pizza tomorrow

i have always just walked in. I don't remember exactly how much but i know they were less than $10 per

Rotolos. And you can even get them rolled out. I think they’re $3 for the regular size.
Don’t forget to stab with a fork before topping.

Fresh Market has frozen dough balls also. Used them several times.

I agree. I’ve left them in the fridge for almost a week and they just develop a ton of flavor.
You can get fresh or frozen all the time and regular or their whole wheat. They used to be $2.65 but they have gone up. Not sure what now but not terrible. And I normally cut one in half and make 2 pizzas.

I did a 4 and 5 day refrigerated homemade dough last week and they came out well. If you have the time to at least do that beforehand, it's worth it. I believe TJ's sells $1.25/pouch of dough that will give you at least one 12" pie. It could be more, not sure. Near $10 for Rocca dough seems outrageous and at that price i might as well let them bake the pizza with their oven and ingredients.
Get a pizza steel if you can and keep it in your oven as you preheat. It will crisp up your dough at the bottom and give very little flop. Jack up whatever oven you have to at least 500 minimum and go to town.

You can make great dough with only like 2 hours of proofing
