A Little Frozen Biscuit Detective Work for the Food Scientists on the Board Please

Went to make some Mary B's Frozen biscuits and the unopened bag was a little puffed up.The biscuits themselves were a little flat.
Being somebody that will try anything food-wise, I threw caution to the wind and cooked them as normal, and they rose up a little bit during cooking, but were still noticably short. We ate them with gravy, so they were passable.
So, what do you think was wrong with them? Was it that they thawed out at some point?

Could have had a puncture of some sort. I googled and there's some info on bacteria as well.

quote:could be the leavening agent (in this case baking powder) activated and caused a reaction, producing C02 in the sealed bag. This could also explain why they were flat and/or didn't rise as much. Might have been during the manufacturing process but could have been during any point in the distribution chain.

Those biscuits in my experience, don't fluff up much

15 years ago they were the best frozen biscuit. I don't know what happened though b/c they are not the same. Pillsbury frozen biscuits are far superior and rise much more than Mary B's.

I've been using them for years, and I find that it varies from bag to bag, quite a bit. Every once in a while I get a batch that just doesn't seem to have enough baking powder, or maybe they're just a little too old.

The bags are always puffed when I buy them

Mary B’s make a couple of different types of biscuits. One of those is Biscuit thins. Maybe you picked up the thins instead?

Just checked and they sure are "Thins".
Doesn't explain the puffed up bag though.

Yes. And they are perfect air fried.

You are so correct. Haven’t bought MB’s in over 10 years.
