Good. I like Calvin and his chicken salad.
You have to eat it pretty quick though. Seems to go bad in short period of time.

My Dad gets a hankering for their chicken salad several times a year and won't stop calling me until I pick some him up a tub or 2. It's great stuff.

Calvin’s chicken salad is excellent, but Murray’s in St. Amant is even better. Murray’s used to do one with smoked chicken that was like crack.

Haven't got around to trying Calvin's yet mainly because we have Rouse's chicken salad right down the street and it's really good. But I was down in Houma a couple of weeks ago and was told to go try Cajun Meat Market's chicken salad. I haven't bought Rouse's since. Holy crap it's so good.

Next time I'm in BR I'm going find Calvin's.

I used to work with an older lady and every time i’d being calvin’s chicken salad for lunch she’d say the same thing:

“its so simple. I try and make it but I just can’t get it right”

every day for 2 months.

MAYBE ITS NOT SO SIMPLE THEN!?!?

Yep. There's always some flavor missing even though it doesn't have any singular specific flavor that stands out that I can detect. I've come close, but more with the texture than the flavor. It's good, but not Calvin's.

I've tried a tablespoon of Apple Cider Vinegar (I got the idea from the Neiman Marcus chicken salad recipe) and it adds a little tartness.. and I've tried adding a little Half and Half and that makes the chicken salad creamy and spreadable.

I love the Neiman Marcus chicken salad. Made it not long ago with the little mandarin orange souffles. It's an entree salad for me, not a "cracker or sandwich" chicken salad. I did sort of wonder about adding whipped cream to the Calvin's version, but I really don't think Calvin's uses that.

My gf has a crazy knack for trying things and being able to recreate it.

I asked her to make some for me and my roommates, and so she did.

Ranch Seasoning was the key she was able to use.

Maybe it is Ranch, but it sure doesn't taste "Ranchy". The rumor way back when was Swanson's chicken salad seasoning that's no longer made.
