IF I eat it on bread, I'll put it on a croissant that I've toasted on the cut sides. Most of the time, I just eat it on a fork, though. Occasionally, I stuff it in a tomato or on an avocado half.

Haven't got around to trying Calvin's yet mainly because we have Rouse's chicken salad right down the street and it's really good. But I was down in Houma a couple of weeks ago and was told to go try Cajun Meat Market's chicken salad. I haven't bought Rouse's since. Holy crap it's so good. Next time I'm in BR I'm going find Calvin's.

Not sure why you got downvoted but Rouse’s chicken salad is tGOAT and - like Calvin’s - I can’t figure out what they do. It’s both simple and unreplicable..

Yep. There's always some flavor missing even though it doesn't have any singular specific flavor that stands out that I can detect.

Mix chicken base with the Mayo before adding to finely ground chicken.

Robert Fresh Market has a pretty good chicken salad/spread. Has a little sweetness.

Sounds like a roadtrip. You can get chicken salad, pimento cheese, and leidenheimer bread there.

Maybe it is Ranch, but it sure doesn't taste "Ranchy". The rumor way back when was Swanson's chicken salad seasoning that's no longer made.

I just asked her. She said the Trader Joe’s ranch seasoning didn’t make the mark

So she then tried with Hidden Valley, and that did the trick.

She also said cream cheese was needed for the consistency

So interesting. I wonder now also about adding chicken base.

I can get the consistency. It's just the flavor that is a struggle, though what I make is very good. It's just not Calvin's.

Depends on your personal tastes. Calvin's is far better than CSC, for me, but they aren't exactly the same types of chicken salad.

Can she give us a recipe that she has used to come close? I live in Bossier and don’t get down to BR as much.

Do you have a recipe for it? Despite my user name I am now in Bossier and don’t get down to BR that often.
