Salmon, roasted veggies, carrots from parents’ garden. More garden stuff as salad. Also turned the ton of tomatoes I was given into soup for the freezer, sans cream. Cream can be added to taste when defrosted to eat.

Fish sticks, onion rings and egg rolls, all cooked in the oven. Was asleep when my wife came home from work, threw something together. :)

Cowboy cornbread
Grilled chicken salad with cucumber, avocado, tomato, shredded parm, balsamic vin dressing. Proud of myself for continuing to eat good during the week with all the crap I eat friday through sunday.

It’s fairly simple. This version is a standard cornbread recipe with ground beef, cheddar cheese, creamed corn, and jalapeños added in.

It looks just like what we had growing up, but we called it Mexican Cornbread.

I've never made Mexican cornbread that had meat in it. That looks good though. It is a meal by itself?

We always made it with pork breakfast sausage. Loved that stuff
