my top 5 that get rewatched from time to time between new shows are:

West Wing
Schitts Creek
Breaking bad
Ted Lasso
And with the kids - Psych

I'd like to add shows that I thought were amazing, but I couldn't watch at night because they stress me out too much to sleep.

Id say your 5 favorite series have to be the ones you choose to rewatch the most. These are ones I can just have on as background noise even whether laying down or cooking dinner.

Thats going to exclude some awesome, deep shows for me that I loved but got the gist of after 1 watch. Some I will eventually rewatch and always enjoy like a GoT or The Last of Us but too heavy and feel I need to really pay attention whenever I have it on.

Chuck is my number 1. I have done about 5 rewatches of the whole series.

Fringe is number 2. I wait a year or two between rewatches and have done a few for it, by that time it is fantastic to revisit.

LOST is up there. I have done 1 full rewatch.

Beat Bobby Flay. There are a ton of episodes. I can throw them on, if I need to clean some I don't mind missing a few minutes. Low stress show to have on.

I did several rewatches of true Detective season 1 episode 2. So many great things to look for and see in that episode.

Sherlock is a great one to rewatch.

Band of Brothers if you include mini-series.

That’s the 5 off the top of my head. I’m sure I’m leaving out several I absolutely loved like The Wire. The last years of X-Files kept me from listing it even though its peak was excellent. Lost is awesome but had a good
bit of filler.

All these could have been on my list. I loved some comedies like Seinfeld, Cheers, Night Court, and Righteous Gemstones but not as much as the dramas and Sci Fis to list them.
