We use Ezzo at my place, it isn't common in South Louisiana. My supplier brings it in just for me, but a couple of suppliers do carry it. I have had people ID the pepperoni immediately when they tasted it and were so happy to have it after not having it for a long time. Our pepperoni isn't a cup and char, but have a cup and char Italian sausage that we use on a couple of pizzas.

I've always associated the little round pepperoni that cups with a lower cost and lower quality pizza... but I've now noticed that two of the best pizza places in our area use that style of pepperoni.
Edit: and aha! I just did a little digging, and they use Ezzo sausage pepperoni as well.
If you're ever in Northwest Arkansas, hit up Pizzeria Ruby... but get there early or be prepared to wait.

Made some fried bologna and cheese sandwiches a few months back. It had been many years since I had one, but they were great.

In general cheap pepperoni has a fibrous casing which prevents it from cupping whereas most high-quality pepperoni uses collagen casings which will cup.
