The majority of restaurants in the country use Cattleman's brand either straight out the bottle or doctored in one way or another. Its a good mix of sweet and heat that folks find appealing. I use it when entertaining guests as it has broad appeal.

John Folse's Rootbeer Bar b que sauce
1 cup ketchup
1 cup root beer
1/2 cup brown sugar
2 teaspoons liquid smoke
1 teaspoon ground ginger
2 teaspoons lea and perrins
1/4 cup orange juice
1/4 cup lemon juice
lemon zest
reduce by 1/2 and add salt and pepper as needed, I am going on memory so my measurements might be a little off but this will get you pretty close

This is mine, measurements are aprox.
2 tsp. paprika
1/2 c. packed brown sugar

2 c. catsup
dash of liquid smoke
a bit of fresh minced sweet onions
Simmer until onions are soft
Some times I add a little yellow mustard & cajun seasoning depending on my mood.

Stubbs is one of the few off the shelf sauces I like. Most are entirely too sweet for my tastes: Kraft, K.C. Masterpiece, Sweet Baby Rays (yes, I know…it has sweet in the name) are all too sweet for me. Stubbs I can live with.
I’ve been experimenting with tomato based sauce recipes at home, in an effort to find one that has the right flavor profile for me: spicy and flavorful but not very sweet. But, I haven’t struck gold yet. Until then, I will stick with mostly dry rubs with no sauce.

My dry rub provides enough heat to offset the sweetness of Sweet Baby Ray's

You can buy Sonny's sweet sauce from Sams club on Airline...it makes a great base to start with. Then add equal parts Barqs rootbeer. Then a good creole seasoning, and a litte red wine vin. Reduce over a low flame till you end up with the same volume you started with of the Sonny's. You will get a classic south louisiana sweet and spicy flavor.

This actually isn't too bad if you cut it with some water. Otherwise it's too thick. I like thin sauces and normally heat them and serve on the side.
Bodacious is the best but you have to be in East Texas to get it. I've got two gallons and two packs of their rib rub left.

amen. too much sauce destroys the integrity of the meat and the smoke.
