Your personal Trinity ratio (onions, celery, bell pepper)?

I was cooking with my aunt recently, and I was surprised at how little bell pepper she used in her recipes. So, it started a discussion within the family and people's opinions varied quite a bit.

I've always done 2-1-1 for a mirepoix, and pretty much every internet source I found agreed. But for the Cajun Trinity, some said equal parts of onion, pepper, and celery. Others said 3-2-1 or even 2-1-1 like a mirepoix.

So, I figured I'd ask the fine cooks of the TD Food and Drink board. Are you a bell paper hater? Do you cut back because you find it too strong? I have another aunt (Dad's side) who is known to despise celery, and she therefore omits it as much as she can.

Never really measure, use what I have on hand , much more onion

i go 2-3 large onions, 2-3 stalks celery, and 2 large bell peppers

2-1-1. Someone on here suggested subbing poblano for bell peppers. I tried it and liked it.

I don't really measure but celery & bell pepper combined is probably close to total onion for me so 2-1-1 is about what I do.

1 onion, couple of celery stalks and because we love bell pepper, we use one of each color

Same. My diced onion pile is generally the same size as my combined diced pepper and celery pile.

I only use onions and occasionally minced garlic as well. Just what I’ve always done and can’t imagine omitting the other two ingredients making that much of a difference in the outcome.

I aim for 1:1:1 but I'm not going to cut 1/2 an onion or bell pepper or celery stalk just to get a that ratio.

This. I buy 1 Onion, 1 Bell pepper, and use 2-3 celery stalks depending on size.

Whatever that ratio works out to be, just depends on the size of the vegetables at the market.

I don't use green bell peppers. At all. I would say I use 3-2-1 onions, non-green bell peppers, celery. I use a lot of celery in my broths and stocks. I don't love the way it looks in dishes.

As others I usually observe the 2-1-1 ratio but also almost always add green onions and garlic at an additional 1-1. With the additional green onions I guess you could say its technically 3-1-1-1.

I always use 1 or 2 more onions than I do bell peppers. Any recipe I use, I double the onions. More onion the better IMO.

Celery I’ll do 2 stalks. Don’t really add it to the ratio, I’ll just do two stalks when I have it.
