I always want to try the red sauce but I seldom order the red sauce as my main entree because 90% of the time, mine is better.

Pici pasta with bolgnese (Bolgna style as a meat not tomato sauce)
Tajarin pasta (very fine egg yolk and flour pasta) with butter sage sauce
Anything Tuscan with wild boar

I know this is a bit cliché, but Fried Calamari and Carpaccio for antipasti, Parpardelle Bolognese or Lasagan for primi, Meatballs or a Bone-in Veal Parmigiana for secondi with a Romaine and Raddichio salad contorno, and Zeppole or Tiramisu for dolce.

Some version of piccata, like chicken or veal. A nice puttanesca sauce works too. So much to choose from...
