Birria tacos on menus - old dish becoming new fad?

several of the Mexican places we frequent in Houston have added this tasty item to their menu
Is it just them or is this a fad trending across America?

They’re delicious, but it’s a fad (and has been for a year or 2).

Fad if only offering beef birria.
Legit if offering goat birria.

I’m waiting on the carne guisada or chicharrron en salsa verde trend to sweep the country.

Fad or not, I love them. Had them from Paco Taco and Mawi in Metairie last week.
Damn good.

I wasn't aware of them until a couple of years ago. Then I started noticing them on the menu at some of the legit hole in the wall Mexican places around here in Georgia.

Fad? Yes, they’ve become very trendy.
New fad? No, it’s been a thing for a few years now.

I had a vegetarian birria in Amsterdam last week.

Definitely the hot new thing to do. I don't care either way, as long as they keep them available. They're new to me, and I'll order them EVERY time.

It's becoming more and more common in Atlanta, but it's an old, traditional dish in Mexico. It's not that hard to make. Most of the effort goes into making the salsa that you use to marinate the roast and then cook it in.

Total fad for 2 years now. This fall, Chilis and Burger King are adding it to their menu. Then next year if you order a birria taco in Brooklyn they'll throw you out.

This, I'm not the most exploring eater but I've had this in Mexico several times over the years, and with a few friends at family events. I was told it was a dish traditionally made for big family gatherings since easy to make in bulk.

It makes for a tasty roast and the salsa is not hard to make, just has several ingredients. I try to make a good bit and can some so I can just open a jar and pour it over the roast when I am in a birria mode.

Fad and even Trader Joe’s has entered the game. They sell frozen birria taco meat in the sauce for$7.99. Easy to make, but cooking the tortillas in the juice can get messy. Add some cilantro, onions and cortija cheese. Quite good even though the positions are somewhat small.

I've made it a lot with Chuck roast in the slow cooker.
I'd rather regular arse pot roast with gravy and mash potatoes. Making the tortillas with cheese and cooking in that consomme is messy af

I don't dip the tortillas in the consomme before I cook the tortillas, it's messy enough after all.
