Maybe a little more detail into what you've not enjoyed about the animes you've watched first?

Don't know if anime is something that you'll like if you have to force yourself to watch but I'll volunteer Dragon Ball Z

One Punch Man is a great starter anime, or atleast was for me. I’m still very surface level on anime in general but that one is just a fun watch
It’s a good natured parody of anime tropes with a fun concept. I guess in that respect it would be a bad one to start with but it didn’t effect me in the same boat
2 seasons on Hulu both subbed and dubbed with a 3rd season coming and an ongoing manga still happening so should be more coming after that.

Cowboy Bebop for sure. I was in your shoes not that long ago. Cowboy Bebop is fricking awesome. Completely different than every other anime with a fantastic voice cast, great animation and a different but funky and cool soundtrack. You’ll dig it for sure
ETA: like others have said, a LOT of anime has some weird shite to it. That’s just part of the genre. Hell I like Naruto and it’s definitely fricking weird at times and makes me question why I like watching it. Cowboy Bebop never made me feel that way. It’s far maturer, probably a reason why Westerners like it a lot more than Asian countries

Studio Ghibli is a good launching point. Specifically Spirited Away and Howl's Moving Castle.
